Rich and fruity Glenmorangie Allta
has wild yeast at its heart

Celebrating ten years of the Private Edition series

Every year for the past decade, Glenmorangie has released an intriguing, limited-edition single malt as part of the pioneering Private Edition series. Glenmorangie Allta – Scots Gaelic for “wild” – is the tenth expression in the collection, and our very first whisky to be created from a bespoke strain of wild yeast growing on local barley.

From the golden fields of the Highlands

Acclaimed whisky writer Michael Jackson once wrote about the unique “house” yeast he believed Glenmorangie possessed. Inspired, Dr Bill Lumsden, Glenmorangie’s Director of Distilling, Whisky Creation & Whisky Stocks, went on explore this idea. He discovered a strain of wild yeast growing on our own Cadboll barley which went on to form the backbone of Glenmorangie Allta.

While yeast has always been a key ingredient in single malt, its impact on flavour has long been overlooked. Dr Bill Lumsden, who has a PhD in yeast physiology, was determined to find a way to showcase its influence.

The result is Glenmorangie Allta, a rich and fruity expression created with a bespoke species of wild yeast, which opens up compelling possibilities for the future of Scotch whisky production.

The making of Glenmorangie Allta

Having discovered a strain of wild yeast that had never been identified before, we reunited it in the whisky-making process with local Cadboll barley. The resulting spirit, noted for its exceptional fragrance, is then matured in ex-bourbon barrels to highlight its fruity character and lend a rich creaminess to the whisky.

Rounded, with biscuit tones, light, floral notes and scents of baking bread emerging alongside vanilla, raisins and mandarin orange.


A crisp, citrus texture brings tastes of butter candy, more creamy vanilla and orange syrup with a little yeast in the background. Then gentle mint and a suggestion of sweet chilli.


Long and earthy, with hints of bitter-sweet orange and peppermint.

With the Private Edition series, we give free rein to the imagination of our whisky creators and invite whisky aficionados to explore our passion for experimentation.

For the tenth anniversary we are delighted to share Glenmorangie Allta, a rich and fruity expression owing its depth of flavour to wild yeast.
