Rich and fruity Glenmorangie Allta
has wild yeast at its heart
Celebrating ten years of the Private Edition series
Every year for the past decade, Glenmorangie has released an intriguing, limited-edition single malt as part of the pioneering Private Edition series. Glenmorangie Allta – Scots Gaelic for “wild” – is the tenth expression in the collection, and our very first whisky to be created from a bespoke strain of wild yeast growing on local barley.
From the golden fields of the Highlands
Acclaimed whisky writer Michael Jackson once wrote about the unique “house” yeast he believed Glenmorangie possessed. Inspired, Dr Bill Lumsden, Glenmorangie’s Director of Distilling, Whisky Creation & Whisky Stocks, went on explore this idea. He discovered a strain of wild yeast growing on our own Cadboll barley which went on to form the backbone of Glenmorangie Allta.
While yeast has always been a key ingredient in single malt, its impact on flavour has long been
overlooked. Dr Bill
Lumsden, who has a PhD in yeast physiology, was determined to find a way to showcase its influence.
The result is Glenmorangie Allta, a rich and fruity expression created with a bespoke species of wild yeast, which opens up compelling possibilities for the future of Scotch whisky production.
The making of Glenmorangie Allta
Having discovered a strain of wild yeast that had never been identified before, we reunited it in the whisky-making process with local Cadboll barley. The resulting spirit, noted for its exceptional fragrance, is then matured in ex-bourbon barrels to highlight its fruity character and lend a rich creaminess to the whisky.
Yeast’s influence on the character of whisky has long been overlooked. Discover the extraordinary layers of aromas and flavour it brings to Glenmorangie Allta.
Rounded, with biscuit tones, light, floral notes and scents of baking bread emerging alongside vanilla, raisins and mandarin orange.
A crisp, citrus texture brings tastes of butter candy, more creamy vanilla and orange syrup with a little yeast in the background. Then gentle mint and a suggestion of sweet chilli.
Long and earthy, with hints of bitter-sweet orange and peppermint.
With the Private Edition series, we give free rein to the imagination of our whisky creators and
aficionados to explore our passion for experimentation.
For the tenth anniversary we are delighted to share Glenmorangie Allta, a rich and fruity expression owing its depth of flavour to wild yeast.

Private Edition N0.10
Marking the tenth anniversary of our acclaimed Private Edition series, Glenmorangie Allta is the first Glenmorangie created from the yeast which grows wild on our own Cadboll barley. This rich, fruity single malt was inspired as Dr Bill Lumsden walked the fields near the Distillery, gathering precious samples of grain. Discovering that the barley nurtured a species of wild yeast unidentified before then, he set out to bring the two together in the making of a creamy and aromatic whisky. Aged in bourbon barrels, including many second-fill casks to showcase the spirit’s fruity character, Glenmorangie Allta (Scots Gaelic for ‘wild’ and pronounced ‘al-ta’) reveals the importance of yeast to the myriad flavours found in Scotch whisky and opens up compelling possibilities for the future.Shop now Back
Private Edition N0.9
The ninth annual release in our acclaimed Private Edition series, Glenmorangie Spìos is the first Glenmorangie ever to be fully matured in American ex-rye whiskey casks. Full-bodied and savoury, its innovative character was inspired by the bygone elegance of America’s golden whiskey era, when American rye whiskey was fêted in the country’s most prestigious saloons. Glenmorangie Spìos (Scots Gaelic for ‘spice’ and pronounced ‘spee-oss’) recalls the spirit’s elegant past, inviting rye’s rare notes of cinnamon and clove to shine through in the Highland Distillery’s uniquely smooth spirit, for a single malt whisky of sophistication and subtle spice.Back
Private Edition N0.8
The eighth release in our multi-award-winning and always intriguing Private Edition, Glenmorangie Bacalta brings new heights of complexity to a rare wood finish. Inspired by the long, balmy days on the island of Madeira, Glenmorangie Bacalta (Scots Gaelic for “baked”) is a sun-soaked single malt which delivers wonderfully warm layers of sweetness, brimming with baked fruits and honeyed tones.
It has been created from Glenmorangie first matured in former bourbon casks, then extra-matured in bespoke casks baked under the sun which once contained Malmsey Madeira – the sweetest and most prized of the Madeira wines.
Private Edition N0.7
Glenmorangie Milsean (Scots Gaelic for ‘sweet things’ and pronounced ‘meel-shawn’) is a single malt whisky full of intense candied fruit flavours and mouth-watering sweetness. It has been created from Glenmorangie matured in ex-bourbon casks and then extra-matured in former wine casks, re-toasted for the purpose. This distinctive cask preparation replicates something of the moreish sweetshop flavours in a single malt whisky.
It is the seventh annual release in our multi-award-winning and always intriguing Private Edition range. And Glenmorangie Milsean, with its remarkable sweetshop allusions, may be the most intriguing of them all.
Private Edition N0.6
The 6th release from Glenmorangie's award-winning Private Edition, Tùsail is the product of a carefully-selected parcel of Maris Otter barley, floor-malted by hand using traditional techniques, and non chill-filtered.
A rich winter variety of barley first introduced in 1965, Maris Otter was bred specifically to meet the demand for a high quality brewing malt and recognized for its ability to impart rich, rustic malty flavours. Now used only by a select few who continue, like Glenmorangie, to uphold an ethos of sacrificing yield for quality by using only the finest ingredients, the result is a whisky celebrating the variety’s renowned taste profile.
Private Edition N0.5
Inspired by Dr Bill’s travels across France’s greatest vineyards and the friends made along the way, Glenmorangie Companta (Scots Gaelic for ‘friendship’) is a refined balance between bold spice and rich, smooth sweetness; the result of a careful assemblage of spirit extra matured in Grand Cru casks from Clos de Tart and those of a lusciously sweet fortified wine from Côtes du Rhône. Non chill-filtered.Back
Private Edition N0.4
Glenmorangie Ealanta is the fourth annual release in our award winning Private Edition range. Scots Gaelic for 'skilled and ingenious', Ealanta is a 19 Years Old Glenmorangie, fully matured in virgin American white oak casks with a provenance that stretches all the way to the mountains of Missouri and the Mark Twain National Forest.
The porous oak wood, air-dried for over 2 years, but in this instance never seasoned with any other whisky, allows our precious spirit to extract maximum flavours as nature intended - producing a whisky of incredible taste and smoothness, with layers of vanilla and candied orange peel, interwoven with sugar coated almonds. Non chill-filtered.
Private Edition N0.3
A Monumental Whisky, Born of Stone. While crafting Glenmorangie Artein Dr. Bill Lumsden, Glenmorangie's Head of Distilling & Whisky Creation, was intrigued by the influence of stone in the natural ingredients of the whisky, especially considering the material's special significance to us. This relationship begins with the Hilton of Cadboll Stone, an ancient monument that is the whisky's inspiration. But of no less importance is the layer upon layer of limestone that filters our Tarlogie Spring water, giving Artein its fruity aromas and layers of complexity.
Or the rocky Tuscan hillsides which concentrate the flavours in vines that will, in turn, add complexity to the 'Super Tuscan' casks in which we extra mature our precious spirit. The result is a whisky with a richness and depth that echoes the extraordinary legacy of stone. Non chill-filtered.
Private Edition N0.2
Glenmorangie Finealta is a painstaking recreation of a recipe dating back to 1903. Matured in a combination of American white oak casks and Spanish Oloroso sherry casks this whisky is unusual for its light touch of peatiness - a reminder of a time when Glenmorangie dried its barley in a peat fired kiln. Distillery archives show that at this time, Glenmorangie Highland Single Malt was being served at The Savoy in London. Making this whisky a window onto a grander age, where optimistic young souls toasted sweeping changes within Art, fashion, and technology. And where society demanded a drink of both depth and distinction. Glenmorangie Finealta is the second release in our prestigious Private Edition range: carefully selected, limited edition whiskies chosen from the 'cabinet of curiosities' of Dr Bill Lumsden, head of our Whisky Creation Team. Non chill-filtered.Back
Private Edition N0.1
Having spent 10 long years maturing in American white oak casks this whisky is transferred into Spanish ex-Pedro Ximenez (PX) casks for its final two years of extra-maturation. Often described as the 'king of sherry casks' this rare wood was brought back from Jerez in Spain by our head of whisky creation Dr Bill Lumsden. Safely back in Tain it can then begin to weave its magic into Glenmorangie Sonnalta PX, adding the famous sweetness and intensity of the cask's previous resident. Glenmorangie Sonnalta PX is the first release in our prestigious Private Edition range: carefully selected, limited edition whiskies chosen from the 'cabinet of curiosities' of Dr Bill Lumsden, head of our Whisky Creation Team.
